TILAPIA WITH TOASTED PECANS AND CAPERS



INGREDIENTS
4 Tilapia Fillets, Thawed
2 Tbsp. Unbleached All Purpose Flour
1/4 Cup Pecan Pieces
2 Tbsp. Butter
1 Tbsp. Capers, Plus Brine They're Packed In


DIRECTIONS
Dredge tilapia fillets in flour and set aside. In a large skillet, toast pecan pieces in the center of the skillet (no butter yet!) until lightly browned, over medium high heat. Push pecan pieces to the outer edge of the skillet and place butter in center, allowing it to melt and turn slightly brown. Spread browned butter over surface of skillet and place tilapia in skillet. Cook about 3 minutes per side, turning over gently once the first side is browned. At the end of cooking time, pour caper brine (about 1 Tsp. for each fillet) on fillets and transfer to serving plate. Pour capers on fillets and you're done! These are perfect served with salad, roasted new potatoes, and good bread.
